FOX, Food and Fragments…

Friday Fragments are the bits and pieces of your week that are usually brief; too short for a stand-alone post, but too good to discard. Collect humorous observations, “Heard” items, and other small gems throughout your week and put them together in a Friday Fragments post. Add a recipe or something ‘foodie’ from your week. The only way to describe my week is to say it’s been a roller coaster ride and I am terrified of roller coasters. It has been a week of worse news after bad news. Its also been a week of great news and for that I am so grateful.

I enjoyed meeting Ric Harris, the CEO of NBC10 Philadelphia at our monthly Press Club meeting. He was so gracious and shared with us his positive vision for the TV station and updated us on the impending move into the newest and tallest Comcast tower.

NBC10 has been located on City line Avenue for more than 30-years. Of the utmost importance to me was making sure plans are underway to move the Billy Penn statue to the top of the new building. [Do you know the story?]

Easter was a rare warm day in the Philadelphia area. We started the day in church and spent the rest of the day with some family and a bunch of grandkids. Easter always leaves me feeling renewed and inspired to keep moving forward while remembering to remain grounded in each and every precious moment.

I dropped my husband off at Philadelphia International before sunrise the other morning to catch a United Flight to Phoenix. He is with his son who is having surgery today after a series of strokes. Please keep him in your thoughts and prayers.

United Airlines and the whole brand; ‘Fly the Friendly Skies’ thing left me missing my Dad more than ever. He was a loyal airline guy who worked for Eastern and Delta. I am horrified by what the airline industry has become and I can only imagine what he is thinking. I’ve never flown on United which is kind of odd now that I think about it. I have so many thoughts about this and am waiting a bit and collecting more information before writing more.

Hollywood producer and screenwriter Donald Bellisario donated 30-million dollars to Penn State University’s College of Communications. The college will now have his name. He created Magnum PI, Quantum Leap and NCIS after starting his career in advertising.

The state of journalism and communications as a whole is such a mess. I have hope when this all shakes out the industry and our right to free speech with be stronger than ever with a strong side of morality.

My binge watch this week was the first season of PBS’s Home Fires. The second season is airing on Sunday nights. Home Fires is based on a small English town as they prepare for World War II. Samantha Bond (Downton Abbey) and Francesca Annis (Reckless, Cranford) star as competing members of The Women’s Institute. The show is painful and heartwarming to watch. I’m a bit sad there’s only 2 seasons.

Oh O’Reilly! As far as FOX News my bet is they are clearing the deck of their most expensive talent to make room for younger (easier controlled) less expensive talent.

As far as O’Reilly I’ve been watching his show for 20-years and loved it. Aside from enjoying the show has he been a sexual harasser and a pig of a man? Probably. Many men over 60 have trouble letting go of the old school way of thinking and acting. They mean no harm, love the women in their lives and wouldn’t intentionally hurt them or want anyone else too. It was just a different time back them. I’m not in any way shape or form excusing his bad behavior. The difference is ‘most’ men haven’t had power, money and the too big to fail arrogance behind them. Personally I believe O’Reilly’s behavior has been more of a competitive and territorial nature and he’s never learned or chose to ignore the ‘new’ rules when competing with women. I believe he has been a creep and at the same time I believe he was the target of a ‘righteous’ mob who took advantage of bad behavior and used it to collect a check.

It never stops hurting my soul the way women accept money as a reward for being harassed and then pledge silence. How does that help anyone but them? I’m sorry it just leaves me, a victim of sexual assault feeling anger towards women that pretend [yes ladies so many do pretend] to be outraged over bad behavior and ignore real assault. It all seems so unbalanced and opportunistic.

Learning to live with Celiac Disease continues to be confusing. Eating gluten-free is easy it’s the grain-free that has me so frustrated. The best advice I’ve been given so far is to shop on all the outside aisles of the supermarket. Fruits and veggies, meats and dairy. Honestly, I’m starving and not feeling any better after 3 ½ weeks. I haven’t cheated at all. If you have any advice or recipes to share they will be appreciated.

Since I’ve been craving pizza and lasagna, my daughter suggested I try eggplant parmesan. I was looking up recipes when I found Dr. Pelmutter’s site. I ordered the book The Grain Brain and am looking forward to trying this interesting recipe this weekend.

Lunch or Dinner Burger

2 tsp olive oil

2 slices eggplant approximately ½-inch thick each

4 oz ground grass fed beef formed into round patty

Lettuce

tomato slice

mustard

pickles

Brush eggplant slices on both sides with oil. In a skillet over medium heat, cook eggplant slices 4 minutes per side. Remove eggplant from pan, place on serving plate and set aside while you cook the burger. Cook burger patty in same skillet as eggplant was cooked, cooking on each side 5 minutes, until cooked through.

To serve, top one eggplant slice with cooked burger patty, add lettuce, tomato slice, pickles as desired, top with the remaining eggplant slice and serve with mustard.

  • What a thoughtful summary of your week. I wish I agreed that journalism would return to what I was taught in college: Who, what, why, when and where… Save the editorial page for the inside of the paper or once a week/month when the station owner got to talk about his personal point of view. You’re so on target about Bill O’Reilly and the men of his/our generation. I don’t think they know how to change, but they’re timely fodder for the liberals–liberal about everything but Christians and Republicans–to muckrake and destroy. I was also told I had celiac a few years ago. The diet didn’t seem to help, so I’ve stayed the course with one of my own devising, and it’s working well. Have a great week, sweet lady! xoxox, Brenda
